This dish proved a little disappointing. I followed the recipe as closely as possible (see below) and froze the meatballs and the tomato sauce as per the documented instructions. The meatballs were dry and largely tasteless - the oregano and parsley had died somewhere during the process. Furthermore the sauce was just too 'tomato-y' - now that may sound daft since the sauce is there to be precisely that, but it needed lifting , perhaps with a chopped red chilli and some lemon juice. Being ruthlessly honest, not Bill's finest moment.

Changes from Published Recipe

Bill's recipe, like too many of his, have awkward principle measurements. The recipe requires 350g of minced pork and 350g of minced veal. Short of going to a specialist butcher, and paying a heavy price for doing so, those weights cannot be met. So I was faced with upscaling to 500g of both meats. Veal is not available at every supermarket, but Waitrose do stock it.

Since I upscaled the meat by about 45%, I needed to do the same for the other ingredients which was quite a challenge! One egg remained one egg, and tablespoon / teaspoon measurements were upgraded as best as possible.

Of course all this effectively means a dish for 4 people becomes a dish for 6. Another factor to consider when deciding whether to make it or not. In retrospect, since the pay-off (i.e. the taste) didn't quite match expectations, it wasn't really worth it, and I have ended up with more to try and get rid of.
