My second venture into the Caribbean in the week, and another permutation using jerk seasoning. Suffice to say, and I really shouldn't have to say this, there is no ready made jerk seasoning direct from a supermarket on show here. The reality is making homemade jerk seasoning is so ridiculously easy there is no justification for buying ready-made. The only ingredient which may not necessarily be in the average kitchen being lime zest, but since I keep a ready supply of limes to be sliced with my girly Mexican bottled beer, it poses no problem for me.

Changes from Published Recipe

The recipe is very straightforward but since I was making two chops and not four, I halved all the ingredients. There was enough of the jerk seasoning to cover both sides of the meat but only because I added a generous glug of olive oil into the mix.

I cooked the second side of the chops for an additional five minutes under a high grill. I didn't think the meat was quite ready after the prescribed 10mins + 10mins as stated in the recipe.
