This Thai Coconut Soup with Turkey Meatballs recipe is effectively a Thai Red Curry, since it utilises Thai red curry paste and coconut milk - the two main constituents for a red curry. It's a winning combination and has the advantage of being very quick to put together - I would say a further 5 minutes above the printed 10 mins prep time resulting in an acceptable 15 mins, and then another 15 minutes to cook.

Changes from Published Recipe

I tried to stick to the recipe as far as possible, and the only variation is I went for full fat coconut milk instead of the recommended low fat. I had some green beans left over from another recipe so included those along with the stir fry vegetables.
