Sometimes when I'm deciding what to make for dinner I'm feeling like I don't really want to undertake anything too challenging. After a long day at the office, or an even longer Saturday on the sofa watching the test match and consuming beer, it makes sense to prepare a meal that's going to be tasty without pushing my somewhat limited culinary skills beyond their limit.

BBC Good Food Magazine's Avocado on Toast with Chorizo and Fried Eggs is simplicity itself. The printed preparation time in the magazine says 15 minutes, and that's been generous. Since I'm a very cautious cook and don't want to get myself in a flap during the cooking process, I lay out all the ingredients like you see on the cooking TV shows. It's the only way I can keep order! So I would say 15 minutes in my case was generous.

The meal itself was tasty albeit a little lightweight. I suspect most people would either want this for a large lunch or need two for a dinner.
