Upon the October Good Food magazine dropping on my doormat I immediately identified the Jerk Chicken Burger as a likely candidate. I have mentioned before that I'm not a huge fan of mango due to the chronic wastage involved and its expense. However, there's no denying they are extremely refreshing and tasty. Add to that chicken marinaded in jerk seasoning and wrap it into a bap and you really can't go wrong.

The recipe was very simple to put together and was a great success. Highly recommended!

Changes from Published Recipe

This was a midweek recipe for one so only one chicken breast was required. As suggested it was wrapped in cling film and flattened. This will mean the meat will be cooked consistently and thoroughly and quickly.

The amount of jerk seasoning was reduced since I only had one chicken breast and obviously I required less lettuce and tomato.
