Steak, peas and French fries with peppercorn sauce. That has to go down as one of the all time greats. A meal that would excite even the most jaded palette whilst propelling them back through a 970s time warp so prawn cocktail and scampi and chips could be sampled at the same time.

Since I'm trying to cut back on my red meat intake, steak has been elevated to treat status and must not be consumed more than once every few months. All the more reason therefore to dive into BBC Good Food November 2013's Steak with Peppercorn Sauce recipe. That day every two or three months is upon us.

The steak was exemplary although obviously irrelevant to the recipe's efficacy. The job in hand was to create the perfect peppercorn sauce and with deep regret I have to say that was not achieved. The sauce refused to thicken despite following the ingredients to the letter - a vast disappointment. Should I have my time again I would add some cornflour into the mix which would of course fixed the issue.

Changes from Published Recipe

I didn't deep fat fry the oven chips. Oven chops - and the clue is in the name - should be cooked in an oven. The sauce was made as per the recipe but regrettably failed to thicken. Just like the printed recipe I went for sirloin steak which is rather unusual for me - my preference is normally for rump, but as it transpired the meat was absolutely lovely.
