So first off, this isn't a beefburger with a rasher of bacon on top. Nope, this is a burger made out of cheap pork cuts. I elected to buy collar of bacon, although this wasn't available in my butchers so I was given an alternative (regrettably I can't remember - perhaps shoulder?). The meat came with bone and rind and had to be soaked for 6 hours after which time it was fall-apart tender.

The burgers were a disaster. I can't remember the time I had a more tasteless meat in a burger (and I'm including high street franchise burger joints in this); in fact the only ingredient I could detect was the tangy apple. All in all, this recipe is showing its age and the current trend of having a plate full of big flavours has rendered this dish obsolete. It could fit neatly into the legendary Goodness Gracious Me "Bland" sketch.

Changes from Published Recipe

I halved the ingredients but found that there wasn't anything like half a pound of meat once the joint had been de-boned and de-rined. Suffice to say, I didn't cook the burgers in lard as the 1970 book suggested :)
