Easy Cook Melting Nachos

A perennial favourite for football fans the world over whilst they watch their chosen sport on TV - nachos. This one is a variant without the normal spicy mince but instead with some shredded ham from the cold cuts counter. It's quite remarkable that this 'recipe' (using the term loosely) has not just been considered for publication, but is prominently positioned in the Easy Cook magazine. Most households I would imagine wouldn't refer to a printed recipe when putting together this dish - it would be thrown together in an ad hoc manner.

Easy Cook Pork with Sweet and Sour Onion Sauce

Sometimes BBC Good Food magazine's recipes are not presented in the most user friendly manner. Case in point is the Pork with Sweet and Sour Onion Sauce recipe which is a narrative without ingredients list. This belies the magazine's title and adds a touch of complexity to the food preparation and introduces the possibility of mistakes. Rant over, this is relatively simple recipe albeit using pork which I've always found difficult to cook correctly. Pork doesn't signpost itself when it is ready to eat and tender - as such there is a tendency to overcook.

Easy Cook Chicken Katsu

Here's a new one for me - a Japanese curry made with Indian Korma paste and breadcrumbed with Kellogs cornflakes! The picture in the BBC Easy Cook September 2013 magazine's recipe is a little misleading - the recipe only covers the chicken part of the dish and the rice with soya beans and chilli are a 'serving suggestion'. However that shouldn't prove to be a challenge to most cooks and I elected to create the recipe as per the picture so anyone stumbling across this blog has got a comparison picture of what it actually looks like versus the professional pictures shown in a magazine.

Easy Cook Salmon Fish Cakes

BBC Easy Cook magazine is an invaluable source of simple midweek recipes, most of which require little effort and more importantly burn little time in the preparation and the cooking. The salmon fish cakes recipe in the September 2013 issue took about 30 minutes (give or take) which is ideal having arrived home from work hungry yet still requiring something nutritious and tasty.

BBC Easy Cook's magazine is a wonderfully low-brow cookery publication packed with simple recipes that even a culinary dullard like myself can manage. I'm not totally convinced all the recipes are the most healthy but they do have nutritional information and thus informed choices can be made.

Good Food Harissa Roasted Tomatoes with Couscous

This recipe from Good Food magazine's September 2013 issue pushed the limits on how long I'm prepared to wait for my after work midweek meal. The roasting time of 40-45 minutes (in fact it turned out to be less) certainly pushed my patience and meant a post-8pm dinner. However it can't be denied that it was a welcome change for me to be eating a meal without any sight of meat.

Good Food Chicken Gumbo

The Chicken Gumbo recipe in BBC Good Food magazine's September 2013 issue represented another scaling issue - the recipe was written for four, but I wanted it make the dish as a week day meal for myself and didn't want to be eating leftovers for the rest of the week. I had one small chicken breast to use up so some mental gymnastics were required.

BBC Good Food magazine have introduced a monthly schedule to their magazine. Of course it isn't consistent since some of the weeks focus on family meals whilst other weeks are dedicated to meals for two. Scaling recipes to my own needs can be difficult - during the week I tend to cook just for myself whilst at the weekend I may have a friend over so it'll be a joint effort. These evening meals during the week after a long hard slog at work must be easy to put together - the last thing I need would be a slog though an overtly complex recipe.

Sunday evening curry has become a bit of a tradition for me, and for that reason it may be time to give it a rest before the institution becomes stale. But before that happens, I knocked up BBC Good Food September 2013 issue's Chicken and Sweet Potato Curry. Now the recipe is ostensibly a 'quick' meal since it is underpinned with a supermarket branded paste. The reality of it is the curry still took a significant amount of elapsed time to prepare, although admittedly some of the legwork had been removed with the use of a paste.

So who doesn't like a good thick chowder? I've been lucky enough to travel to the States on many occasions and remember well my first sampling of New England Chowder in situ. From that point on, I just had to return to the same restaurant every day of my holiday for the same meal. Thankfully chowder has finally travelled across the pond and is becoming more available in this country,
