Good Food Barbecued Fajita Steak

Yey! It's Mexican food night! The July 2011 issue of BBC's Good Food devoted a double page spread purporting to what the average Tijuanense may well be quaffing and necking on a typical Saturday night. Naturally the centrepiece of this meal is the ever popular fajitas, and is accompanied with guacamole, sizzling onions and peppers, soured cream and washed down with hearty drafts of Mexican beer cocktails.

The guacamole is very easy to put together - with only avocados, lime, garlic, and jalapeños with a few coriander leaves on top. This can be thrown together in five minutes flat Smile

It's probably fair to suggest that BBC's EasyCook magazine is not aimed at the highbrow end of home cuisine market. Despite this, there are plenty of good ideas contained within, and the beauty of most of the recipes (as the magazine's name suggests) is they are simplicity itself to make.

Easy Cook Cod with Bacon, Lettuce and Peas

There was a time when I was eating fish twice a week and I was quite sanctimonious about my healthy eating. Subsequent to that I appear to have forgotten about our watery friends and turned my attention to red meat. Distinctly less healthy. So here's a recipe that straddles the two territories - cod and bacon. Neither should be on anyone's grocery list to be honest. Cod is not a sustainable fish and I really should have gone for pollock.

This was my second recipe penned by the legend that is Madhur Jaffrey, the other being Chicken in a Coconut Sauce (Kukupaka) which received the Badzilla treatment a week ago. Madhur is to be complimented on producing delicious recipes, and without a cook-in-sauce or paste in sight. The ingredients should be found in most kitchens - or at least in mine, and my box full of spices is doing quite nicely thank you.

Noteworthy of this recipe is the requirement for whole chicken legs (i.e. drumstick and thigh attached). That's not something that Tesco have in their home delivery catalogue, so instead I had to buy a whole chicken and chop it up. That meant my lethal James Martin boning knife got another airing. Now I've studied the YouTube footage on how to cut a chicken into 8 (or in this case 6) pieces many times and I'm now confident enough not to need any refresher views, but I'm damned if I've got a handle of that knife.

Good Food Stir-fry Chilli Beef Wraps

There were a couple of compelling reasons for selecting this recipe - firstly any stir fry is going to be quick, and secondly it uses inexpensive frying beef. In fact for once I'd say I probably equalled the magazine's suggested preparation time if not bettered it with a meagre ten minutes or so. The meat was bought from Tesco's value range of products - not something I can often say, but it was a good looking piece of frying steak, albeit with a little marbling of fat which I removed, and it was quite thin which was great for its purpose.

Good Food Sloppy Joe Pizza Bread

Trawling through my back issues of BBC Good Food magazine I came across this lovely midweek snack. A cross between chilli (without the chilli) and pizza, it is essential football watching TV finger food. The ingredients take no great sourcing, although after work (circa 7pm) meant my Tesco Express as usual had no store baked bread left. I can confirm the Fulham Palace Road branch is totally feckless, and the Hammersmith Metro branch 10 minutes walk away is not far behind.
